native of New Orleans with BS and PhD degrees in Physical
Organic Chemistry, Professor Frank Juge joined the UCF
Chemistry Department in July of 1968 as an Assistant Professor.
His specialty is organic chemistry mechanisms. In the past
35 years, he has been promoted to the rank of Professor,
and has served as Dean of Graduate Studies and Associate
Vice President, Acting Vice President for Research, Acting
Provost. He retired from UCF in July of 2003 in the capacity
of Vice Provost for Academic Affairs. He is proud of his
role in establishing the Burnett Honors College, the Karen
Smith Faculty Center for Teaching and Learning and web
based learning at UCF. In 1975 he taught the first course
at UCF featuring the Chemistry of Wine and Winemaking,
and has grown a grape arbor and made wine as a hobby. Over
the last four years he has visited wineries in the French
Loire Valley, Alsace and Bordeaux, the Rhine region of
Germany, Spain, Australia, the northwest coast of the US,
Canada, Switzerland, Austria, South Africa, Greece, the
Tuscany and Veneto regions of Italy, and Japan. He also
enjoys exploring the many small wineries across the US.
He is an Emeritus Professor of Chemistry and Hospitality
Management and joined the faculty of the Rosen College
full-time. He is currently teaching: "Exploring Wines
of the World", “The History and Culture of Wine”,
and “Introduction to Hospitality Management” in
the Rosen College of Hospitality Management (see course
